Healthy Berry Coconut Muffins

These easy one-bowl muffins are packed with wholesome ingredients like whole wheat flour, oats, coconut, and mixed berries. They are moist, delicious, and perfect for a quick breakfast or snack.

Ingredients:

  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 cup shredded coconut
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 egg
  • 1 cup mixed berries blueberries, strawberries, raspberries
  • 1/2 cup unsweetened applesauce
  • 1/2 cup Greek yogurt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • A pinch of salt

Instructions:

Start by heating the oven to 350F 175C

Put the whole wheat flour, rolled oats, shredded coconut, baking powder, baking soda, and a pinch of salt in a large bowl

Honey or maple syrup, melted coconut oil, egg, plain Greek yogurt, and unsweetened applesauce should all be mixed together in a different bowl using a whisk

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Add the mixed berries slowly

Use paper liners or a little coconut oil to grease the inside of a muffin tin

Fill up every muffin pan about two thirds of the way to the top with muffin batter

After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean

After taking the muffins out of the oven, let them cool for 5 minutes in the pan before moving them to a wire rack to cool all the way down
