Cumin-Ginger Rice Pilaf with Braised Beef
Ingredients:
- 1 lb beef chuck, cubed
- 2 cups basmati rice, rinsed
- 3 cups beef broth
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 1 tbsp cumin seeds
- 1 tbsp grated ginger
- 1 tsp ground coriander
- 1/2 tsp turmeric powder
- 1/2 tsp red chili flakes
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Fresh cilantro for garnish
Instructions:
Put vegetable oil in a large skillet and heat it over medium-high heat
It will take about 5 minutes of searing the beef cubes until they are brown all over
Take the beef out of the pan and set it aside
Put the chopped onion in the same pan and cook for about 3 minutes, until it gets soft
Ginger that has been grated, cumin seeds, ground coriander, turmeric powder, and red chili flakes should all be added
Go on and cook for two more minutes
Put the beef back in the pan and add the beef broth
Once it starts to boil, lower the heat, cover, and let it cook for one and a half hours, or until the beef is soft
In a different pot, boil 3 cups of water at the same time
Put in some rinsed basmati rice and a pinch of salt
Cover and cook on low heat for 15 to 20 minutes, until the rice is fluffy and cooked
When the rice is done and the beef is soft, add the rice to the beef mixture and gently stir to mix
Add more salt and pepper if you think it needs it
Add fresh cilantro as a garnish before serving
