Fruit-Laden Whole-Grain Pancakes

These Whole-Grain Pancakes with Fruit Filling are a healthy and tasty way to start the day. Theyre a great way to start the day because theyre full of whole wheat goodness and fresh fruits.

Ingredients:

  • 1 cup whole wheat flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh berries blueberries, strawberries, or raspberries
  • 1/4 cup diced apples
  • 1/4 cup diced bananas
  • 1/4 cup chopped nuts optional

Instructions:

In a large bowl, whisk together the whole wheat flour, brown sugar, baking powder, baking soda, and salt

In a separate bowl, whisk together buttermilk, egg, melted butter, and vanilla extract

Pour the wet ingredients into the dry ingredients and stir until just combined

Dont overmix; lumps are okay

Gently fold in the fresh berries, diced apples, diced bananas, and chopped nuts if using

Heat a non-stick skillet or griddle over medium-high heat and lightly grease it with butter or cooking spray

Pour 1/4 cup portions of the pancake batter onto the hot skillet for each pancake

Cook until bubbles form on the surface and the edges look set, about 2-3 minutes

Flip the pancakes and cook for an additional 1-2 minutes, or until they are golden brown and cooked through

Transfer the pancakes to a plate, and repeat with the remaining batter

Serve the Fruit-Laden Whole-Grain Pancakes warm, topped with extra fresh fruit and a drizzle of maple syrup
