Blueberry Crumb Bars
Blueberry crumb bars are tasty. They have a buttery crust, a juicy blueberry filling, and a crumbly topping. Great for dessert or a sweet treat
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups fresh blueberries
- 1/4 cup granulated sugar
- 2 teaspoons cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest
- Powdered sugar, for dusting
Instructions:
Warm the oven up to 190C 375F
An 8-inch square baking pan should be greased or lined
Put flour, baking powder, salt, and 1/2 cup sugar in a bowl
Add butter and mix until the mixture looks like big crumbs
Add the egg and vanilla to the crumb mixture and stir it in until everything is well mixed
Make a well in the pan and press half of the mixture into it
Put the blueberries, 1/4 cup of sugar, cornstarch, lemon juice, and lemon zest in a different bowl
Cover the crust in the pan with the mixture
On top of the blueberry layer, crumble the rest of the crumb mixture
For 40 to 45 minutes, or until just beginning to brown
Let it cool all the way in the pan on a wire rack
Before cutting into bars, sprinkle with powdered sugar
