Stuffed Cupcakes

Surprise your taste buds with a cream cheese and raspberry filling inside these stuffed cupcakes. Great for satisfying your sweet tooth

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup chocolate chips
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup raspberry jam

Instructions:

Warm up your oven to 350F 175C and put cupcake liners in a muffin tin

Mix the flour, baking powder, and salt together in a bowl with a whisk

Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy

One at a time, add the eggs and beat well after each one

Add the vanilla extract and mix well

Slowly add the dry ingredients to the wet ones, mixing them in with the milk every so often

Start with the dry ingredients and end with the milk

Dont mix any further than that

The chocolate chips should be carefully mixed in

Put about half of the cupcake batter into each cupcake liner

Put the powdered sugar, vanilla extract, and cream cheese in a different bowl, and mix them together until the mixture is smooth

Put some of the cream cheese mixture in the middle of each cupcake

On top of the cream cheese filling, put a small amount of raspberry jam

Add a little more cupcake batter on top of the filling until each liner is about three quarters full

After the oven is hot, bake the cupcakes for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean

For a few minutes, let the cupcakes cool in the pan

Then, move them to a wire rack to cool completely

Once the cupcakes are cool, you can frost them with cream cheese frosting if you want to, and then decorate them however you like
