Triple Chocolate Shortbread Cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 cup cocoa powder
- 1/4 teaspoon salt
- 1/2 cup semisweet chocolate chips
- 1/2 cup white chocolate chips
- 1/2 cup dark chocolate chunks
Instructions:
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy
Mix in the vanilla extract
In a separate bowl, whisk together the all-purpose flour, cocoa powder, and salt
Gradually add the dry ingredients to the butter mixture, mixing until just combined
Fold in the semisweet chocolate chips, white chocolate chips, and dark chocolate chunks
Divide the dough in half and shape each half into a log, about 2 inches in diameter
Wrap the logs in plastic wrap and chill in the refrigerator for at least 1 hour, or until firm
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
Slice the chilled dough logs into 1/4-inch thick rounds and place them on the prepared baking sheet
Bake for 12-15 minutes, or until the edges of the cookies are lightly golden
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once the cookies are completely cooled, theyre ready to enjoy
