Marinated Salmon Apple Salad

The marinated salmon apple salad tastes great with the crisp apples, soft grilled salmon, and tasty balsamic dressing. This salad is great for lunch or dinner because its healthy and filling.

Ingredients:

  • 2 salmon fillets
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 4 cups mixed greens
  • 2 apples, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup toasted walnuts
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard

Instructions:

Mix the olive oil, lemon juice, garlic powder, salt, and pepper in a bowl using a whisk

Put the salmon fillets in a plastic bag that can be closed again and again, and then pour the marinade over them

Place the bag in the fridge for at least 30 minutes with the lid on

Warm up your grill or grill pan on the stove by setting it on medium-high heat

Put the salmon on the grill for four to five minutes on each side, or until its fully cooked

Make the salad while the salmon is cooking

Mix the mixed greens, sliced apples, red onion, toasted walnuts, and crumbled feta cheese together in a large bowl

To make the dressing, mix the honey, Dijon mustard, and balsamic vinegar in a small bowl with a kitchen whisk

After the salmon is done, take it off the grill and let it sit for a while

After that, break it up into small pieces and add them to the salad

Pour the dressing over the salad and mix everything together until its well covered
