Honey Cornbread Muffins
Ingredients:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup buttermilk
- 1/4 cup unsalted butter, melted
- 1/4 cup honey
- 1/4 cup vegetable oil
Instructions:
Preheat your oven to 375F 190C and line a muffin tin with paper liners
In a large bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt
In another bowl, whisk together the eggs, buttermilk, melted butter, honey, and vegetable oil
Pour the wet ingredients into the dry ingredients and stir until just combined
Do not overmix
Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean
Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely
Serve the Honey Cornbread Muffins warm with a drizzle of honey if desired
