Vitality Superfood Salad

This superfood salad is full of healthy foods that will give you a boost of energy. It has just the right amount of flavors and textures to make you feel full and energized.

Ingredients:

  • 2 cups mixed greens kale, spinach, arugula
  • 1 cup quinoa, cooked and cooled
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red bell pepper, chopped
  • 1/4 cup carrots, shredded
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup almonds, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions:

Put the cooked quinoa and mixed greens in a large bowl

Add the feta cheese, almonds, red onion, carrots, red bell pepper, red bell pepper, and cherry tomatoes to the bowl

Making the dressing: Put the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper in a separate small bowl and mix them together with a whisk

Pour the dressing over the salad, then toss everything together until its well mixed

Serve right away as a tasty and healthy superfood salad
