Keto Green Curry Scallops with Mango Cilantro Salsa

This Keto-friendly recipe combines succulent scallops with the vibrant flavors of green curry and refreshing mango cilantro salsa. Its a delightful blend of creamy, spicy, and fruity tastes that will tantalize your taste buds while keeping you on track with your low-carb lifestyle.

Ingredients:

  • 1 lb scallops
  • 2 tbsp green curry paste
  • 1 can 14 oz coconut milk
  • 1 tbsp coconut oil
  • 1 red bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 mango, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions:

In a skillet, heat coconut oil over medium heat

Add sliced bell pepper, onion, and minced garlic

Saut until softened

Stir in green curry paste and cook for another minute

Pour in coconut milk, stir well, and let simmer for 5 minutes

Season scallops with salt and pepper, then add them to the skillet

Cook for 2-3 minutes on each side until they are opaque and cooked through

In a separate bowl, combine diced mango, chopped cilantro, and lime juice to make the salsa

Serve scallops with green curry sauce and top with mango cilantro salsa
