Keto Green Curry Scallops with Mango Cilantro Salsa

Ingredients:
- 1 lb scallops
- 2 tbsp green curry paste
- 1 can 14 oz coconut milk
- 1 tbsp coconut oil
- 1 red bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1 mango, diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions:
In a skillet, heat coconut oil over medium heat
Add sliced bell pepper, onion, and minced garlic
Saut until softened
Stir in green curry paste and cook for another minute
Pour in coconut milk, stir well, and let simmer for 5 minutes
