Chicken & Potatoes with Garlic Parmesan Cream Sauce
Ingredients:
- 4 chicken breasts, boneless and skinless
- 4 medium potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 cup grated Parmesan cheese
- 1 cup heavy cream
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
Instructions:
Get the oven ready by heating it up to 400F 200C
Add diced potatoes to a large bowl
Add 1 tablespoon of olive oil, salt, pepper, and garlic powder
Toss the potatoes so that they are evenly covered
Spread the potatoes out in a single layer on a baking sheet
Bake for 20 to 25 minutes, or until they are golden brown and soft
Add salt and pepper to the chicken breasts at the same time
In a pan over medium-high heat, heat the rest of the olive oil
Add the chicken and cook it for about 6 to 8 minutes on each side, until it is browned on both sides and done
Take the chicken out of the pan and set it aside
Add minced garlic to the same pan and cook for one to two minutes, until it smells good
Add the heavy cream and grated Parmesan cheese
Keep stirring the sauce for three to five minutes, or until it gets thick
Put the chicken back in the pan and cover it with the garlic Parmesan cream sauce
Put the chicken and potatoes on a plate together and top them with chopped fresh parsley
