Cheesy Green Chile and Potato Chowder

This hearty and tasty chowder has the warmth of potatoes, the spiciness of green chiles, and the richness of cheddar cheese.

Ingredients:

  • 4 cups potatoes, peeled and diced
  • 1 cup onion, finely chopped
  • 1 cup celery, finely chopped
  • 2 cups green chiles, roasted and diced
  • 4 cups chicken broth
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 4 cups whole milk
  • 3 cups sharp cheddar cheese, shredded
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions:

Put the potatoes, onion, celery, green chiles, and chicken broth in a large pot

Bring to a boil, then lower the heat and let it cook slowly until the potatoes are soft

Melt the butter over medium heat in a different saucepan

To make a roux, stir in flour

Slowly whisk in the milk until the mixture is smooth and thick

Mix the milk with the potatoes and well mix them together

Add the crumbled cheddar cheese and mix it in until it melts and is smooth

Add pepper and salt to taste

Simmer on low heat for another 10 minutes, stirring every now and then

Serve hot with chopped green onions on top
