Vanilla Marshmallows
Ingredients:
- 2 1/2 tablespoons unflavored gelatin
- 1/2 cup cold water
- 2 cups granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup water
- 1/4 teaspoon salt
- 2 teaspoons pure vanilla extract
- Powdered sugar, for dusting
Instructions:
Mix the gelatin with 1/2 cup cold water in a mixing bowl
Give it ten minutes to bloom
Mix the granulated sugar, corn syrup, 1/4 cup water, and salt in a saucepan over medium heat
After the sugar has dissolved, stir
Remove the sugar mixture from the heat source as soon as the candy thermometer registers 240F 115C
Slowly add the hot sugar syrup to the gelatin mixture in a thin stream while continuing to mix on low speed
Take care, as the mixture is extremely hot
Once the mixture is thick, white, and fluffy, turn the mixer up to high and beat for another ten to fifteen minutes
After a minute, add the vanilla extract and stir until thoroughly incorporated
A 9 x 9-inch 23 x 23 cm baking dish should be greased and dusted with powdered sugar
After filling the dish with the marshmallow mixture, level the top and sprinkle additional powdered sugar on top
Let the marshmallows sit overnight or for at least four hours at room temperature
After setting, use cookie cutters to create creative shapes or slice the marshmallows into squares
To keep them from sticking, dust the cut edges with extra powdered sugar
