Seafood Salad

For a light lunch or dinner, this seafood salad is a great choice. There are ocean flavors in this dish, along with bright, fresh vegetables. It will make your taste buds happy. You can eat it as a starter or as a main dish with crusty bread.

Ingredients:

  • 500g mixed seafood such as shrimp, squid, and mussels, cooked and chilled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup black olives, sliced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Lettuce leaves for serving

Instructions:

In a large bowl, combine the cooked seafood, cherry tomatoes, cucumber, red onion, black olives, and parsley

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper

Pour the dressing over the seafood mixture and toss gently to coat

Refrigerate the salad for at least 30 minutes to allow the flavors to meld

To serve, arrange lettuce leaves on plates and spoon the seafood salad on top

Garnish with additional parsley if desired, and serve chilled
