Glutenfree Vegan Walnut Prune Bread

This gluten-free vegan walnut prune bread is a tasty and healthy treat that is full of the good things that walnuts and prunes can do for you. It tastes great, stays moist, and is great for a quick breakfast or snack. Its also gluten-free and vegan-friendly, so it can be eaten by people with a range of dietary needs.

Ingredients:

  • 1 1/2 cups gluten-free flour
  • 1/2 cup almond flour
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped prunes
  • 1/2 cup maple syrup
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 2 tablespoons ground flaxseed mixed with 6 tablespoons water flax eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions:

Preheat oven to 350F 175C

In a small bowl, prepare flax eggs by mixing ground flaxseed with water

Set aside to thicken

In a large mixing bowl, combine gluten-free flour, almond flour, chopped walnuts, chopped prunes, baking powder, baking soda, cinnamon, and salt

In another bowl, mix together maple syrup, unsweetened applesauce, almond milk, and prepared flax eggs

Add wet ingredients to dry ingredients and stir until well combined

Pour batter into a greased loaf pan

Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean

Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely

Slice and serve
