Monterey Chicken is a tasty and filling dish that is perfect for people who are following a ketogenic diet. Juicy grilled chicken breasts are topped with sugar-free barbecue sauce, crispy bacon, melted cheddar cheese, fresh tomatoes, and green onions. Its very tasty and low in carbs.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup sugar-free barbecue sauce
  • 4 slices cooked bacon
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • Salt and pepper to taste

Instructions:

Preheat your grill to medium-high heat

Season the chicken breasts with salt and pepper on both sides

Grill the chicken for 6-8 minutes per side, or until cooked through

Brush each chicken breast with sugar-free barbecue sauce during the last 2 minutes of grilling

Top each chicken breast with a slice of cooked bacon, followed by shredded cheddar cheese

Close the grill lid and cook for an additional 1-2 minutes, or until the cheese is melted

Remove the chicken from the grill and top with diced tomatoes and sliced green onions before serving
