Keto Buffalo Cauliflower Bites with Vegan Cucumber Ranch
Ingredients:
- 1 medium head cauliflower, cut into florets
- 1/2 cup almond flour
- 1/2 cup unsweetened almond milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1/2 cup hot sauce sugar-free
- 2 tbsp olive oil
- 1/4 cup vegan mayonnaise
- 1/4 cup unsweetened almond milk
- 1/2 tsp dried dill
- 1/2 tsp dried parsley
- 1/2 tsp dried chives
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper to taste
- 1/4 cup diced cucumber
Instructions:
Preheat the oven to 450F 230C
In a bowl, mix almond flour, almond milk, garlic powder, onion powder, smoked paprika, salt, and pepper to make the batter
Coat cauliflower florets with the batter and place them on a baking sheet lined with parchment paper
Bake for 20-25 minutes until crispy, flipping halfway through
In a separate bowl, mix hot sauce and olive oil
Toss baked cauliflower in this mixture until well coated
Return cauliflower to the baking sheet and bake for an additional 10 minutes
Meanwhile, prepare the vegan cucumber ranch by mixing vegan mayonnaise, almond milk, dried dill, dried parsley, dried chives, garlic powder, onion powder, salt, and pepper in a bowl
Fold in diced cucumber into the ranch dressing
Serve buffalo cauliflower bites with vegan cucumber ranch dip
