Chocolate Red Wine Cupcakes
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup red wine preferably a robust red
- 1/4 cup sour cream
- 1 tsp vanilla extract
- 1/4 cup semi-sweet chocolate chips
Instructions:
Preheat your oven to 350F 175C and line a cupcake pan with paper liners
In a medium-sized bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt
Set aside
In a separate mixing bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the eggs one at a time, beating well after each addition
Stir in the red wine, sour cream, and vanilla extract until the mixture is well combined
Gradually add the dry ingredients to the wet mixture and mix until just incorporated
Be careful not to overmix
Fold in the semi-sweet chocolate chips into the batter
Divide the batter evenly among the cupcake liners, filling each about two-thirds full
Bake in the preheated oven for approximately 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Remove the cupcakes from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely
Once cooled, you can frost the cupcakes with your favorite frosting or enjoy them plain
