Blackberry and Apple Spelt Pancakes with Brown Buttered Kentish Cobnuts

These pancakes are a delightful combination of blackberries and apples, made with wholesome spelt flour, and topped with brown buttered Kentish cobnuts. They are perfect for a special breakfast or brunch treat

Ingredients:

  • 1 cup spelt flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 egg
  • 2 tablespoons melted butter
  • 1/2 cup blackberries
  • 1/2 cup diced apple
  • 1/4 cup Kentish cobnuts
  • 2 tablespoons butter for browning
  • Maple syrup for serving

Instructions:

In a mixing bowl, combine spelt flour, brown sugar, baking powder, baking soda, and salt

In another bowl, whisk together buttermilk, egg, and melted butter

Pour the wet ingredients into the dry ingredients and stir until just combined

Be careful not to overmix; some lumps are okay

Gently fold in the blackberries, diced apple, and Kentish cobnuts into the batter

Heat a non-stick skillet or griddle over medium heat and add a little butter to coat the surface

Pour 1/4 cup of the pancake batter onto the hot skillet for each pancake

Cook until bubbles form on the surface, then flip the pancakes and cook until golden brown on both sides

Remove the pancakes from the skillet and keep warm

In a small saucepan, melt the remaining 2 tablespoons of butter over low heat until it turns brown and smells nutty

Be careful not to burn it

Drizzle the browned butter over the pancakes and serve hot with maple syrup
